Slow-Roasted Lamb Shoulder with
Garlic & Herbs
A Sophie Hansen Favourite
Tender, flavour-packed and oh-so-forgiving, this
lamb shoulder is the ultimate centrepiece for a relaxed Easter lunch. Servebwith roasted autumn veggies, crusty bread, and a simple green salad.
Here’s how to make it:
Ingredients:
1 lamb shoulder (bone-in)
4 garlic cloves, sliced
Handful of rosemary and thyme
Olive oil, salt, pepper
1 cup of chicken stock or white wine
Method:
Preheat oven to 160°C.
Make small slits in the lamb and tuck in garlic and herbs.
Drizzle with olive oil, season well.
Place in a baking tray with stock or wine.
Cover tightly with foil and roast for 4 hours until it’s falling apart.
Uncover, turn up heat to 200°C for 20 mins to crisp the edges.
Set the scene for slow feasting and long conversations with a table layered in natural textures and thoughtful details.
